Deliciously Healthy Bison Recipes
Buffalo is naturally flavorful and tender, useful in any red-meat recipe. Nutritionally, it has more protein and nutrients with fewer calories and less fat. As a dense meat, it tends to satisfy more with less. In addition, members of the National Bison Association oppose the use of growth hormones or stimulants in their meat.
Cilantro Lime Buffalo Tacos
1 buffalo flank steak - 1" thick (1 to 1 1/2 pounds)
4 limes
Marinade
Juice of 3 limes
2 tsp salt
1 tsp pepper
1 1/2 cups of chopped cilantro
2 tbs chopped onion
Pico de Gallo
Juice of 1 lime
2 tsp salt
1 tsp pepper
1/2 cup of cilantro
1/2 onion
3 medium tomatoes
2 jalapeno peppers, de-seeded
Put all of the pico de gallo ingredients into a food processor and pulse-chop for chunky.
Taco fixin's: soft or crunchy tacos, shredded lettuce, shredded cheese, diced tomatoes, etc.
Make marinade with limes, salt, pepper, cilantro, and chopped onion. Pour over bison, and let marinate 8 hours or overnight.
Place buffalo steak on a medium grill sprayed with nonstick cooking spray. Heat for 4-6 minutes per side, turning only once. Let steak rest for a few minutes before carving into thin strips (about 1/8").
Prepare your tacos, top with pico de gallo, and serve with chips, beans, and/or Spanish rice.
Savory Buffalo Oven Roasted Meatballs
1 pound ground lean buffalo
1/2 cup finely chopped mushrooms
1/3 cup finely chopped red onion
1 egg, beaten
2 cloves garlic, minced
1 tsp salt
1 tsp ground black pepper
1 tsp Italian seasoning
In medium bowl, combine all ingredients. Mix until well blended. Form into 24 meatballs about the size of a large walnut. Spray a jellyroll pan with non-stick cooking spray. Place meatballs on pan. Roast in preheated 400F degree oven for 10 minutes. Serve with dipping sauce.
Dipping Sauce
2/3 cup low fat mayonnaise
1/3 cup Dijon mustard
3 tbsp chopped green onions
Combine ingredients in small bowl. Stir to blend. Serve.
